  • 2 ripe bananas, peeled and coarsely mashed (about ¾ cup)
  • 1 cup fresh blueberries (about 4 oz)
  • Optional: ½ cup chopped walnuts (for texture and healthy fats)

Directions

Preheat oven to 350°F (175°C). Place a rack in the center of the oven. Butter and flour a 9 × 5 × 3-inch loaf pan, tapping out excess flour; set aside.

  1. In a medium bowl, whisk together flour, baking soda, salt, baking powder, cinnamon, and nutmeg.
  2. In a large bowl, beat sugar, oil, eggs, and vanilla until blended. Stir in the mashed bananas and gently fold in the blueberries (reserve a few to press on top, if desired).
  3. Add the dry ingredients to the wet mixture and stir just until combined — avoid overmixing. Fold in walnuts if using.
  4. Pour batter into the prepared pan and smooth the top. Bake until a toothpick inserted in the center comes out clean, about 1 hour. Ovens vary — check at 50 minutes.
  5. Cool in the pan for 15 minutes, then remove to a wire rack and cool completely (about 2 hours) before slicing.
